Okra or ladies-finger as its called in many parts of the world. Okra improves your heart health and lowers your risk of oxidative damage and blood clots. The best way to know if the okra is young and crisp is to try and break the thin tail of on of them. If it breaks clean and easy then its good. If its getting crushed and fibrous then its mature and is not preferred from a taste perspective. Today i am going to share a crispy okra recipe.

This is an easy recipe to make. All it requires is the okra itself and a few spices. And you could whip up a tasty dish. It’s healthy dish to cook up. It can be had by itself or with Roti- Indian Flat Bread or use it as sandwich filling with a slice of cheese.

Crispy Okra Recipe

A vegan favorite

By:

Ingredients
  • 2 Cups Okra
  • 1 tsp rock salt / 1/2 tsp normal salt
  • 1/2 tsp turmeric powder
  • 1/2 red chilli powder
  • 2 tsp cooking oil
  • 1 tbsp flour
Directions
  • Step 1 Slice the Okra vertically.
  • Step 2 Mix all the ingredients except the oil together and mix well.
  • Step 3 Heat a pan on high flame with the oil . Wait till the oil heats up.
  • Step 4 Add the Okra mixed with the flour, salt and spices.
  • Step 5 Stir-Fry for 10-12 mins.

Slice the Okra vertically.

Heat a pan on high flame with the oil . Wait till the oil heats up.
Add the Okra mixed with the flour, salt and spices.

Stir-Fry for 10-12 mins.

Ingredients
  • Rice and Dal Batter
  • 1/2 cup grated carrot
  • 1/2 cup finely chopped onion
  • 1/2 cilantro leaves
  • salt to taste
Directions
  • Step 1 Mix all the ingredients well.
  • Step 2 Put them into the Paniriyam case
  • Step 3 Cover it and cook it for 2 mins.
  • Step 4 Flip with a spoon and cook for another 2 mins.
  • Step 5 Serve hot with mint chutney/ coconut chutney or a dip of your choice.

Potato Idly recipe – Idly in a new avatar.

Potato idly recipe is one of my favorite breakfast recipes. It’s full of carbs which can be a good thing in the morning if the person has an active lifestyle. Active kids will do well with this recipe. This can also double up as a quick and healthy snack.

I serve this with green mint chutney. However, you can use any dip of your choice. Hummus would be a good alternative.

Ingredients
  • 3 medium size potatoes
  • 1 ¼ cup sooji (semolina)
  • 1 tbsp ginger grated
  • ½ cup curd
  • ½ cup water
  • 2 finely chopped green chillies
  • ¼ tsp turmeric powder
  • ¼ tsp red chili powder
  • ¼ cup chopped coriander
  • ¼ tsp baking soda / Eno salt
  • Salt to taste
  • Oil for Frying
Directions
  • Step 1 Peel off and cut the potatoes in small pieces.
  • Step 2 Add sliced potatoes, curd, grated ginger, green chillies, water, salt, red chillies and turmeric powder in a mixer and grind these in to a flowing paste.
  • Step 3 Take out this mixture in a big bowl and add sooji (semolina). Keep it aside for 30 minutes.
  • Step 4 Again, mix well, the consistency of the mixture should be fit for making idlies. In case it is thick, add more curd or if its too runny than you can add more Sooji to make it thicker.
  • Step 5 Add the chopped coriander.
  • Step 6 Keep a cooker on fire with water for steaming.
  • Step 7 Ensure to apply some oil on the pan/ idli mould stand to prevent sticking.
  • Step 8 Add Eno or baking soda in the mixture, mix well.
  • Step 9 Put the mixture in a Dhokla steaming pan or Idli mould stand.
  • Step 10 Steam in the cooker for 10 minutes. Remove from fire and allow to cool.Take them out.
  • Step 11 Cut them in to small pieces as per your choice or keep complete idlies.
  • Step 12 Shallow fry them on low flame in a fry pan till golden brown.
  • Step 13 Garnish with crackled, curry patta, hing and mustard in hot oil.
  • Step 14 Serve with green mint chutney/ coconut chutney or sambar.

Again, mix well, the consistency of the mixture should be fit for making idlies. In case it is thick add curd, if it’s too runny then add Sooji.

Add the chopped coriander.

Keep a cooker on fire with water for steaming.
Ensure to apply some oil on the pan/ idli mold stand to prevent sticking.
Add Eno or baking soda in the mixture, mix well.

Put the mixture in a Dhokla steaming pan or Idli mold stand.
Steam in the cooker for 10 minutes. Remove from fire and allow to cool. Take out the dhokla or idlies.
Cut them in to small pieces as per your choice or keep them as complete idlies, shallow fry them on low flame in a pan till golden brown.

Alternatively, you can add other veggies like grated carrot etc in this recipe. This is a great device to get veggies into your kids. Not only is this a filling breakfast this serves as a nice carbs boost for a kid who has an active day, physically and mentally ahead of her/him.
