Bengali Omelette Recipe – The breakfast of the masses.

Egg and bread is one of the most popular breakfast items across the world. Its quick easy tasty and nutritious. Now how can one ignore something like that. While its an easy recipe to make, how the omelette tastes has a lot to do with how its beaten and made. Today i am going to show you my special special Bengali Omelette recipe.

My kids have grown up eating this a lot. I used a pan called “Kadai” which is common in India. If you don’t have anything like that use a deep pan that you can use to cook. There is a Video of the process after the recipe. Do follow that.

Bengali Omelette Recipe

You can use other items likes tomatoes or ground meat as well into this.

Ingredients
  • 3 Eggs
  • 1 medium onion- finely chopped
  • 5-6 curry leaves - Optional
  • 1 green chilli - Finely chopped
  • 1/2 tsp salt or to taste
  • 1/8 tsp pepper/ red chilli powder
  • 30 ml milk
  • 2 tbsp ghee.
  • Oregano/Parsley/Cilantro to Garnish - Optional
Directions
  • Step 1 Break the eggs into a bowl. Make sure the bowl has space for you to beat the egg.
  • Step 2 Add the onion, green chilli, curry leaves,salt and pepper/red chilli powder.
  • Step 3 Beat it with a bender, manual or mechanical.
  • Step 4 Add the milk. Beat it nicely with a blender until there is lots of froth. This makes the omelette soft and fluffy.
  • Step 5 Heat a Kadai/deep pan on low flame for 20 secs.
  • Step 6 Add the oil and spread it all around the pan including UPTO THE edges of RIM.
  • Step 7 As soon as the oil starts smoking pour the entire mixture into the pan.
  • Step 8 Spread it around the pan as shown in the video below this section. Use your hands to hold the pan and spread it as thin and wide as possible in the pan.
  • Step 9 Use a thin edged spatula to start scraping the sides of the pan and fold it gently on both sides of the omelette.
  • Step 10 Flip it gently. Be careful its really fragile at this stage.
  • Step 11 Fry the other side for 40-50 secs by gently pressing down with a spatula.
  • Step 12 Flip into a plate and serve. Garnish with Oregano/Parsley or Cilantro.
  • Step 13 This goes amazingly well with bread loaves roasted on a pan with a spoon of Ghee ( Clarified Butter). A CUP of TEA goes well with the Omelette Bread !

Use a thin edged spatula to start scraping the sides of the pan and fold it gently on both sides of the omelette.

Flip it gently. Be careful its really fragile at this stage.

Fry the other side for 40-50 secs by gently pressing down with a spatula.

Flip into a plate and serve. Garnish with Oregano/Parsley or Cilantro.

This goes amazingly well with bread loaves roasted on a pan with a spoon of ghee/butter/oil. A CUP of TEA goes well with the Omelette Bread !
