Samosa recipe, the king of snacks now at home.

What do you do with your free time when your home and have nothing to do ? I decided to use my time and cook up something. Samosa is a very popular Indian snack and here is a nice samosa recipe for you !

I hope all of you will enjoy this recipe. This is a snack that goes almost with anything. You can have it with Tea or Coffee or use it as snacks for a drink session.

While frying the Samosa, do NOT heat the oil too much. This will lead to the surface of the Samosa getting burned quickly but the insides being un-cooked. As you heat the oil, test it by dropping a tiny ball of flour into the oil. If it floats then the oil is ready. Reduce flame to Sim and THEN fry the Samosas.

Ingredients
  • 500 grams potatoes.
  • ½ cup frozen green peas.
  • 8 Cashew nuts.
  • 1 tbs of ghee (clarified butter)
  • 1-2 green chilies.
  • 1 pinch hing.
  • 4 tbs coriander leaves.
  • ½ tsp salt.
  • SPICE
  • 3/4th tsp cumin seeds.
  • 1 tsp garam masala.
  • 3/4th tsp Red Chilli Powder.
  • ½ tsp salt to taste
  • SAMOSA COVERING
  • 2 Cups all-purpose flour or organic maida
  • ¼ cup or melted ghee.
  • ½ spoon ajwain/ bishop’s weed
Directions
  • Step 1 MAKE THE FILLING.
  • Step 2 Boil the potato until they are soft. You can check that by inserting a fork.
  • Step 3 Semi-mash them about 60%. DO NOT mash them completely like mashed potatoes.
  • Step 4 Heat a pan with some oil. You can use any vegetable oil. However, mustard is good.
  • Step 5 Add some cumin seeds and fry till they sizzle.
  • Step 6 Add ginger and after 30 secs add the cashew nuts. Fry for 2 mins.
  • Step 7 Add green peas and fry for 2 mins.
  • Step 8 Add all the spices. Red Chilli, Cumin Powder, Coriander Powder and fry for 30 secs.
  • Step 9 Add potatoes and sprinkle salt.
  • Step 10 Add cilantro leaves. (This is optional)
  • Step 11 Taste add salt, chilli flakes or lemon depending on your taste buds.
  • Step 12 Set it aside.
  • Step 13 MAKE THE OUTER COVERING
  • Step 14 The dough is made of all-purpose flour.
  • Step 15 Mix ajwain/bishop’s weed, salt, flour and ghee in a bowl and mix well.
  • Step 16 It may take some experience to knead the dough and make rolls out of them.
  • Step 17 Make small portions of the dough and roll into small balls.
  • Step 18 Grease the rolling area and then flatten. Drizzle some oil on the surface before rolling on it.
  • Step 19 Roll them into oval shape 8.5 inches and 6.5 inches. If you dont know how watch this Video
  • Step 20 One way to use a pot and place on top of the dough and use it like a stencil to get a round shape. Else cut them into two halves.
  • Step 21 Create a cone and fill it with the potato fillings
  • Step 22 Once its filled make sure it is sealed completely to prevent oil seepage.
  • Step 23 MAKE THE SAMOSA – READ THE TIPS SECTION BEFORE PROCEEDING.
  • Step 24 Heat some oil in a deep pan. Make sure its deep enough to allow the Samsosa to be fully submerged in the oil.
  • Step 25 Put them one by one into the oil. Let them fry for 4-5 mins. In case of meat fillings make that 6-7 mins.
  • Step 26 Take them out and out them on a plate with tissue paper. It helps absorb the extra oil.
  • Step 27 Well there you are, tasty, crispy and juicy Samosas!. You can serve it traditionally with mint and tamarind sauce.

Tips

While we have used the traditional filling in this samosa recipe which is Potato. One can also use mixed vegetables, cottage cheese, chicken, lamb,veal or ham.

Making the filling.

Boil the potato until they are soft. You can check that by inserting a fork.
semi-mash them about 60%. DO NOT mash them completely like mashed potatoes.

Add cilantro leaves. (This is optional)
Taste add salt, chilli flakes or lemon depending on your taste buds.
Set it aside.

Making the outer Crust.

The dough is made of all-purpose flour.
Mix ajwain/bishop’s weed, Salt, Flour and Ghee in a bowl and mix well.
It may take some experience to knead the dough and make rolls out of them. If you don’t know how to knead dough. See this VIDEO.

Put them on by one into oil. Let them fry for 4-5 mins. In case of Meat Fillings make that 6-7 mins. The oil temperature needs to be regulated to make sure its not too hold or too cold.
