Now while we all have had ripe bananas , using raw bananas is something that is not very common. Today I am going to share with you recipe for Raw Bananas. This is a very popular recipe in India. It’s nutritious , Vegan and Yum !

Stir Fried Raw Banana Recipe

Ingredients
  • 2 Raw Bananas Chopped
  • 2 Green Chillis Chopped / 1/2 tsp red chilli powder
  • 8-10 Curry Leaves
  • 1 medium Onion chopped
  • 2 Grated Cloves of Garlic / 1/2 tsp Garlic paste
  • 1/2 inch Grated Ginger / 1/2 tsp Ginger paste
  • 1 tsp Urad Dal
  • 1/2 tsp Haldi / Turmeric powder
  • 1/2 tsp Sarso / Mustard
  • 1/2 tsp Jeera / Cumin Seeds
  • 1/2 tsp Garam Masala/ Indian Masala
  • 1/2 Salt / Salt as per taste.
  • 2 tsp oil
Directions
  • Step 1 Wash the Banana, Peel and Chop the Banana into Small pieces.
  • Step 2 Use blender to make a paste of ginger, garlic and chillis. Set aside.
  • Step 3 Pulse the onion coarsely also nicely in the mixer.
  • Step 4 Heat a pan with a spoon of oil on high flame.
  • Step 5 When the oil heats up add the Cumin seeds, Mustard and Urad Dal. Fry till the Dal is brown in color. Then add curry leaves
  • Step 6 Then add the Ginger Garlic CHilli paste and cook for 30 secs.
  • Step 7 Now add the chopped Bananas.
  • Step 8 Sprinkle the Haldi / Turmeric powder on top and mix well.
  • Step 9 Cook for a few mins and then add the salt and mix well.
  • Step 10 Lower the flame to low-medium and cook till they are soft and juicy.
  • Step 11 Now increase to high flame again and add the Onions. Cook untill they start to turn brown.
  • Step 12 Bring to low flame and add the Garam masala and Red Chilli (If using).Mix well and fry for a couple of mins.
  • Step 13 Serve with Rice, Roti or have it as a snack!

Wash the Banana, Peel and Chop the Banana into Small pieces.
Use blender to make a paste of ginger, garlic and chillis. Set aside.

Pulse the onion coarsely also nicely in the mixer.
Heat a pan with a spoon of oil on high flame.

When the oil heats up add the Cumin seeds, Mustard and Urad Dal. Fry till the Dal is brown in color. Then add curry leaves.
Then add the Ginger Garlic Chilli paste and cook for 30 secs.
Now add the chopped Bananas.

Sprinkle the Haldi / Turmeric powder on top and mix well.

Cook for a few mins and then add the salt and mix well.
Lower the flame to low-medium and cook till they are soft and juicy.

Now increase to high flame again and add the Onions. Cook untill they start to turn brown.

Bring to low flame and add the Garam masala and Red Chilli (If using).Mix well and fry for a couple of mins.
Serve with Rice, Roti or have it as a snack!

Vegan Sabudana Tikki or Tapioca is a very interesting dish that is made of Tapioca pearls extracted from Cassava roots. Cassava plant is native to Brazil which then spread to many other parts of the world. The plant which makes up for its fragility with seriously strong roots. There are rare occasions when a small 6-8 feet tall thin weed of a plant can have a root system that yields almost 200 kilograms of roots !

In India this dish is usually made when people are fasting. However, i like to make this frequently in our family. Adults enjoy this and the kids love it !

Vegan Sabudana Tikki Ingredients

Tips

Soaking : Soak the Tapioca Pearls (Sabu Dana) overnight in water. The water level should be just above the level of the Tapioca Pearls.Check the Tapioca in the morning. They should be soft and easy to smash with fingers but they should NOT be wet. If they are wet leave them for another hour or so.

Oil Temperature : The oil while frying should neither too hot nor warm. If it’s too hot, the patties will brown from the outside however it may break since the inside would uncooked.If just warm then the patty comes out soggy.

Choice of Flour : If you are in India you can also use Refined flour to add to the viscosity. Alternatively, Rice flour adds to crunchiness also. But don’t overdo this step !

Ingredients
  • 1.5 Cups Sabudana (tapioca pearls)
  • 3 Medium size potatoes
  • 1/2 Cup peanuts
  • 1 tsp cumin seeds - optional
  • 2 green chilies - finely chopped
  • 1 tsp grated ginger - grated
  • 2 tbsp cilantro - Finely chopped
  • 1 tsp sugar
  • 2 tbsp cornflour
  • Salt to taste
Directions
  • Step 1 Soaking Sabudana
  • Step 2 Soak the Tapioca Pearls (Sabu Dana) overnight in water. The water level should be just above the level of the Tapioca Pearls.Check the Tapioca in the morning. They should be soft and easy to smash with fingers but they should NOT be wet. If they are wet leave them for another hour or so.
  • Step 3 When ready drain all the water carefully from the bowl and keep DRY Sabudana aside.
  • Step 4 Prepare the Mixture
  • Step 5 Boil the potatoes, peel and mash them. Don’t mash them like mashed potatoes. Leave some texture. Mash about 80%-85%.
  • Step 6 If you have roasted peanuts you can skip this step. Else roast the raw peanuts in a shallow pan till they are crisp.
  • Step 7 Ground the peanuts. You can use a mixer as well. Grind to about 70%. Leave them as small pieces. DON’T grind them to a powder.
  • Step 8 Add the ground peanuts,boiled potatoes,corn flour,salt,cumin seeds,sugar,ginger,green chilies and cilantro leaves to the Sabudana . Mix well.
  • Step 9 Now roll portion of the mixture in your hands and then flatten it into a patty shape. Repeat for the rest of the mixture.
  • Step 10 Sabudana Vada
  • Step 11 Heat oil in a deep pan. Temperature is important. Both high and low temp oil with ruin your Patty/Tikki. Keep the heat in the medium range.Always.
  • Step 12 Fry one of the patties to check for consistency. If the patty fries well, then continue with the rest.
  • Step 13 If it breaks then mix the patties again and add corn flour to the mixture and adjust to make it more sticky. Roll and make the patties again.
  • Step 14 Fry till they are brown and then flip.
  • Step 15 Flip couple of times till they are done on both sides.
  • Step 16 Pick with a perforated spatula to allow the oil to seep and put it on plate with tissue papers so as to absorb the excess oil.
  • Step 17 Serve Sabudana Vada with green mint chutney or tamarind chutney or ketchup. you can also experiment with other dips like Hummus or Garlic Mayo.

There this yum patty is ready. You can serve with mint or tamarind chutney. You can also use ketchup. If you are really into fusion food, I would urge you to try this with Hummus or Garlic Mayo.

Sabudana Tikki

You can also use the patty to make sandwiches or Yum Vegan Burgers.The fillings and the dips are all upto your imagination. The dish is versatile and can be used in many ways.

Popular opinion on the best way to replace meat seems to be Soya. Well I happen to hate Soya ! After a bit of search I found something else that could replicate the texture of meat. The magic ingredient here is the much-ignored beetroot! However, for some reason the beetroot is rarely used in serious cooking despite it being a powerhouse of nourishment.

Beetroot is an excellent source of vitamins that helps in dealing with various ailments. Off topic : Want to look younger ? Eat beetroot as part of your diet and apply beetroot Juice on your face regularly, especially under the eyes ! It is also an excellent source of Anti-Oxidants, the Potassium in beetroot helps in muscle and bone enhancements. It’s known for its ability to boost libido! It’s not every day your burger is going to make you horny! So gulp that super food down!

You can use bread crumbs or semolina to help with binding. In this recipe i have used roasted oats . I have suggested butter and cheese in a couple of places for vegetarians who may want to use them to enhance taste. If you are looking for a 100% VEGAN recipe , simply replace them with cooking oil. I have shallow fried the patty, You can deep fry for taste or bake / air fry for health.

Ingredients
  • 2 potatoes boiled and half mashed
  • 2 medium beetroots grated
  • 1 medium Onion finely chopped
  • 1 cup oats – Roasted. Crush slightly with spatula
  • 2 green chilli chopped
  • 1-inch ginger chopped
  • 3-5 pieces of garlic
  • 25 pieces of peanuts ground into bits.
  • ½ tsp Turmeric powder
  • Red chilli powder to taste
  • 1 tsp coriander/Dhaniya powder
  • 2 tbs Cooking oil
  • Cucumber, Tomato, Onion and Cheese Slices to dress burger. You can add your own into this.
  • Salt to taste
  • Sauces like – Tabasco, barbecue, ketchup or salad dressings – Optional
Directions
  • Step 1 Heat a pan on medium with a tsp of oil.
  • Step 2 Once the oil heats add the ginger pieces into the pan. Fry for 10 secs.
  • Step 3 Add the garlic cloves. Fry for 10 secs.
  • Step 4 Add the green chill. Fry for 10 secs.
  • Step 5 Add the onion. Add the turmeric and red chilli. Fry till translucent and pink.
  • Step 6 Add the beetroot. Saute and mix well. Cook for 5-7 mins or till the beetroot cooks. Set Aside.
  • Step 7 In a bowl. Mix the potatoes, peanuts, roasted oats and beetroot mix.
  • Step 8 Add Salt and mix well. You can add a spoon of butter/ghee to it if you like.
  • Step 9 Shape them into nice UFO shaped patties.
  • Step 10 Shallow Fry them in a pan. You can also deep fry, bake or air fry them.
  • Step 11 Fry them till they turn brown and crispy on both sides.
  • Step 12 Heat the Buns. You can again apply butter or ghee inside the buns
  • Step 13 You can also add cheese to the burger if that’s parts of your diet.
  • Step 14 Put the patty and the dressings between the buns and serve.

As the oil heats add the ginger. Fry for 10 secs.

Add the beetroot. Saute and mix well. Cook for 5-7 mins or till the beetroot cooks. Set Aside.

There now you can enjoy burgers just like anyone else. The taste is likely to be really yum. As usual adults like it and kids love it. However, for a change you don’t have to worry about kids not getting their nutrition. You can add other veggies also in small quantities.

This format can be used to make healthier meat burgers as well. Reduce the amount meat and use beetroots to replace atleast 50% of the meat. It’s a good training device looking to move in that direction.
