The Vegan Omelette recipe | Reusing side crusts of bread

Many households with children tend to discard the sides of breads. Today I will show you how to reuse bread sides to make Vegan Omelette.

I call the dish a sliced cutlet. Its very close to a dish i used to enjoy back in Kolkata called ‘cutlet’. The dish is tasty and healthy. You can add meat to the fillings if that’s part of your diet. Here is have used Tofu If you are Vegetarian you can replace with cottage cheese. This is an as you go make it up kind of recipe. Even meat eaters can enjoy this dish !

It tastes like an omelette, so i call it a vegan omelette πŸ™‚

Many households with children tend to discard the sides of breads. Today I will show you how to reuse bread sides to make a yum dish that almost tastes like an Omelette. So i call it Vegan Omelette.

Ingredients
  • White Bread slices
  • 1 cup besan/gram flour/corn flour
  • 1.5 tbs rice flour
  • 1/2 capsicum chopped
  • 1 small tomato chopped
  • 1 medium Onion Chopped
  • 1/2 carrot grated
  • 100 grams Tofu for Vegan/ cottage cheese for vegetarians.
  • 10-15 leaf stalks Coriander leaves.
  • 1/2 tsp of Baking soda.
  • 1 Cup Water
  • Cooking Oil
  • Red Chilli
  • Pepper
  • Salt
  • Other Spices – Optional
Directions
  • Step 1 First cut the centers of the bread slices out of them and set aside.
  • Step 2 Mix the besan/gram flour and rice flour with some water. Make sure its nice and viscous. It should NOT be too runny.
  • Step 3 Keep some grated vegetables aside for garnishing.
  • Step 4 Add the remaining vegetables, tofu/cottage cheese and spices to taste. Mix Well.
  • Step 5 Add the baking soda into the batter.
  • Step 6 Heat a pan with a pinch of cooking oil.
  • Step 7 Put the cut out outer edge of the bread into a pan.
  • Step 8 Fit with the batter. Garnish with some of the vegetables.
  • Step 9 Pour some drops of oil around the bread edge to ensure it fries well and does not stick.
  • Step 10 Gently now push in the cut out part.
  • Step 11 Gently Flip it. This is important. Make sure it does not break or the vegetables don’t leak out.
  • Step 12 Cover with a lid and let it cook for 3-4 mins.
  • Step 13 Flip a couple of times. If you like a nice brown fried texture, Use a bit of oil and fry a bit more.

First cut the centers of the bread slices out of them and set aside.

Mix the besan and rice flour with some water. Make sure its nice and viscous. It should NOT be too runny.

Keep some grated vegetables and cilantro aside for garnishing.

Add the remaining vegetables, cottage cheese/tofu and spices to taste. Mix Well.

Add the baking soda into the batter.

Heat a pan with a pinch of cooking oil.

Put the cut out outer edge of the bread into a pan.

Fill it with the batter. Garnish with some of the vegetables.

Pour some drops of oil around the bread edge to ensure it fries well and does not stick.

Gently now push in the cut out part.

Gently Flip it. This is important. Make sure it does not break or the vegetables don’t leak out.

Cover with a lid and let it cook for 3-4 mins.

And there you go tasty healthy wholesome snack for the family. If made in good quantities this can be a meal. You can serve this with ketchup, sandwich spreads and dips. You can use these slices to make sandwiches out of them. How filling would that be πŸ˜‹
