Vegan Walnut Banana Cake recipe. Quick and easy !

This version is a vegan Walnut banana cake recipe. This is a flavorsome cake recipe and one can add spices to enhance fragrance and taste. However, I am loath to suggest too many variations in the cake recipe. All it takes is one small thing to go off track and the whole cake could come out badly. So, while I personally experiment in my kitchen, I am going to share a vegan version of the dish.

Vegan Walnut Banana Cake Recipe

The batter recipe is for baking pan size – 7/4 inches --- DO NOT just directly MIX. Use CUT & FOLD Method to mix the ingredients. If you don’t know how See the video link below the recipe.

Ingredients
  • 3 Bananas
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • ½ cup 100 gm olive oil
  • 1 tsp vinegar.
  • ¼ tsp cinnamon powder
  • 2 cup 310 gm wheat flour
  • Salt to taste
  • ½ cup chopped walnuts
Directions
  • Step 1 Take the sugar and powder it in a mixer. Set aside.
  • Step 2 Grease the baking pan with oil and flour, you can also use butter paper.
  • Step 3 Pre-heat the oven to 180© degrees.
  • Step 4 Blend the 3 chopped bananas.
  • Step 5 Add the vinegar, olive oil and the vanilla extract. Mix Well. Set aside.
  • Step 6 In a bowl Add the wheat flour, baking powder, baking soda, cinnamon powder, salt and the sugar. Sieve them well. Make sure there are no lumps.
  • Step 7 Add the walnuts. DO NOT just directly MIX. Use CUT & FOLD Method to mix the ingredients. If you don’t know how – Here is a Video.
  • Step 8 Put some walnuts in the pan.
  • Step 9 Transfer the batter to the baking pan.
  • Step 10 Pat the tray to remove any air trapped in the batter.
  • Step 11 Add some more walnuts on top.
  • Step 12 Put the pan into the preheated oven. Bake the cake at 180© degree Celsius for 40 mins. You can also use a pressure cooker => Click here how

  • Step 14 Cut into slices and serve.

Tips

You can store this cake in the refrigerator for 3-4 days.

You can replace Walnuts with Choco chips to make it a Choco chip – banana cake.

You can change the flour to make it gluten free.

I have used normal sugar and powdered it. You can use ready powdered sugar if you have it at home.

Use ripe bananas. If they are a little gooey that’s fine. They should NOT be ones that have JUST become ripe and are still a bit hard.

Put some walnuts in the pan.

Transfer the batter to the baking pan.

Pat the tray to remove any air trapped in the batter.

Add some more walnuts on top.

Put the pan into the preheated oven. Bake the cake at 180 © degree Celsius for 40 mins.

Allow the cake to cool, cut into slices and serve.

There your beautiful banana cake is ready. As we said you can store it in the fridge for 3-4 days. I have used olive oil but you can use any cooking oil. You can also use ghee and butter, however their quantities would change and thus would not be in the scope of this recipe.
